Off the coast of Florida, in a glass jar, in the galley of a sunken Spanish treasure ship, buried deep beneath the ruins we found this recipe for cinnamon-ginger candy. Legend has it, life at sea had few rewards but to the sailors on these ships one piece of this was treasured much more than gold.

Cinnamon and ginger have been used for centuries as a natural remedy in the treatment of arthritis, sea sickness, nausea, taste stimulation, and are known for their aphrodisiac properties. These spices were so highly prized that fortunes were made and lost and empires were built around their import and export. Once more valuable than gold these were two of the most profitable spices in the Dutch East India Company Trade.
